Breakfast Sausage Casserole

1 lb Jimmy Dean All Natural Sausage 10 eggs, beaten 1/3 cup milk 1 cup shredded sharp cheddar cheese 1 tsp dry mustard dash of salt and pepper Preheat oven to 350 degrees. Fry up sausage in a skillet until cooked through. Drain on paper towels. Add rest of ingredients and mix well. Pour into greased 8 1/2″ x 11″ pan. Bake for about 20 minutes or until lightly golden brown. Serve warm.

Roasted Vegetables

Fresh veggies (Orange and Yellow peppers, zucchini, yellow squash, purple onion) Kale & Grape/Cherry Tomatoes (add towards end of cooking) 2 TBS extra virgin olive oil salt & pepper 1 1/2 tsp marjoram

Drizzle olive oil on cookie sheet and add cut up chunks of veggies: Orange and Yellow peppers, zucchini, yellow squash, purple onion.  Sprinkle with desired about of salt and pepper. Sprinkle with marjoram. Bake on 350 degrees for about 15 minutes. Check to make sure they stay a bit crunchy. Then add kale and grape/cherry tomatoes (Add these right before the end of cooking time because they cook fast and will get soft and soggy if cooked too long) and cook for another 4 minutes. Serve immediately while nice and warm.

Such a good and healthy way to begin the day with some veggies! And add a bowl of fresh fruit to even make it more nutritious and delicious!
