This Gluten Free Citrus Avocado Salad was a hit when I prepared it at a New York State Fair Wegman’s Cooking demonstration this weekend. This salad is so refreshing and delicious. It is a light salad with a honey citrus dressing that is drizzled on right before serving. It is beautiful and will be a hit at your next dinner. It is the perfect Summer salad.
GLUTEN FREE CITRUS AVOCADO SALAD 3 cups green leaf lettuce 1 orange, peeled to remove skin & pith, sectioned 1 avocado, sliced 1/2 cup fresh blueberries 1/4 cup orange juice with pulp 1 tsp orange zest 1 tsp lime zest 2 Tbsp apple cider vinegar 2 Tbsp honey 1 clove minced garlic 1/4 tsp Himalayan Pink Salt 2 Tbsp extra virgin olive oil 1/4 tsp ground black pepper
Using your hands, tear lettuce into bite sized pieces. Place in a serving dish. Peel orange to also remove pith and section with a sharp knife. Place orange slices on top of lettuce leaving spaces for the avocado slices. Slice completely around the avocado to separate and remove pit. Using a large spoon, remove avocado halves and slice each half. Place slices in between each orange slice. Top with blueberries.
Dressing: Combine the next 9 ingredients for the dressing in a large measuring cup. Using a whisk, combine ingredients well. Drizzle over salad. This is a very light dressing that allows you to taste each of the fruits and veggies in the dish.
