This is a wonderful dish to bring to any potluck or holiday dinner! It is delicious and a favorite of so many. It goes so well with turkey or ham. Be prepared to take an empty dish home!
Gluten Free Sweet Potato Crunch Casserole
1 (40 oz) can yams OR 3 cups cooked, mashed sweet potatoes 1 egg, slightly beaten 1/2 cup sugar 1/2 cup milk 1/2 tsp salt 1 tsp vanilla
Mix all ingredients together and pour into a greased baking dish. Cover with crunch topping.
Melt 2 1/2 Tbsp butter. Add: 1 cup light brown sugar 1 cup chopped pecans 1/3 cup gluten free flour
Mix together and put on top of casserole. Bake at 350 degrees for 45 minutes.
