The name of these brownies are so fitting as they are intensely fudgy, gluten, dairy and grain free. The Perfect Gluten Free Brownies are truly perfect! The recipe is from Emily at OneLovelyLife.com and and super easy to make! Gotta give credit where credit is due. Great job Emily!

My neighbor brought these brownies to us along with a dinner from our neighbors not that long ago. Our neighbors knew that myy husband had knee replacement surgery. What a gift that dinner was in addition to the second dinner they provided when four weeks later he had the second knee replaced! Boy, arthritis sure can do a tremendous amount of damage to joints.
Knee surgery is a very big deal. The second knee has been more of a recovery for him. But it’s now been 6 1/2 weeks post op from both, and it’s still a rough time for him as he is still in pain. They say knee replacement surgery is more painful and a longer recovery than hip replacement surgery! I believe it!
So these brownies were such a gift. We are so grateful for thoughtful neighbors as we have been in the same neighborhood now for 27 years. Between sweet neighbors and wonderful friends from church, we were well taken care of. Meals that were so large, we had leftovers for days! What a gift! It was a reminder to me of how much a simple act means so incredibly much. Receiving food, encouraging text messages and being told we are being prayed for is so important for the patient and the caregiver. Being a caregiver is so very tiring.

The Perfect Gluten Free Brownies
2/3 Cup semi-sweet or dark chocolate chips 5 Tbsp coconut oil (can sub butter, avocado oil, vegan butter, ghee) 2/3 Cup coconut sugar (can sub white, brown, or maple sugar) 2 eggs 1 tsp vanilla 2/3 Cup blanched almond flour 2 Tbsp unsweetened cocoa powder 1/2 tsp baking soda (if paleo) or baking powder 1/4 tsp salt
2/3 cup additional chocolate chips or chopped nuts
Optional: Course Sea Salt to sprinkle on top
Preheat oven to 350°. Line an 8×8 baking pan with parchment paper or spray with nonstick spray. In a small saucepan, gently melt chocolate and oil over low heat until smooth and glossy. Remove from heat and set aside to cool slightly. In a small bowl, whisk together sugar and eggs until slightly lighter in color and until they pass the ribbon test (when you lift the whisk the mixture should stream down evenly in “ribbons”). Set aside.
In medium bowl, whisk together the dry ingredients-almond flour, cocoa, baking soda and salt. Working slowly, whisk the egg/sugar mixture into the saucepan of melted chocolate. Whisk until smooth. Stir in vanilla and mix in. Stir in the dry ingredients and fold until just mixed. Fold in the additional chocolate chips or nuts.
Pour batter into your prepared pan and smooth the surface. Bake at 350° 20-24 minutes, or until edges are set and the center is still ever so slightly underdone. (The remaining heat should set the center as it cools.) The brownies will be very fudgy.
Sprinkle with course salt, if using, and allow brownies to cool before slicing.
